Holiday Greetings – A Recipe – Some Jokes

These are unprecedented times that call for following new health recommendations for celebrating Christmas 2020. We will be enjoying the holiday season with members of our household only. Our children are excited despite not seeing friends and other family members. They have our attention and time which is what kids really like.

We are very happy. Life is good. I hope you take this time to have fun with your loved ones. Stay warm and stay safe and have a happy and healthy New Year in 2021.

Savory Roasted Chickpeas - A Nutritional Snack! - 3 Easy Steps

Did you stock up on cans of chickpeas during the corona virus pandemic? With this easy recipe you can use them to make a nutritional snack for the whole family.

Ingredients:

2 tablespoons olive oil

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon chili powder (optional)

1 pinch each of sea salt and ground black pepper

1 (15 ounce) can chickpeas, rinsed and well drained

Directions:

Step 1 - Preheat an oven to 350 degrees F (175 C).

Step 2 - Whisk oil, cumin, paprika, garlic powder, chili powder and black pepper in a small bowl; add the chickpeas and toss to coat. Spread onto a parchment-lined baking sheet.

Step 3 - Roast stirring occasionally, until nicely browned and slightly crispy, about 40- 45 minutes.

Snack on these instead of chips. Try it sprinkled on a salad for extra protein.

Holiday Greetings – A Recipe – Some Jokes

We will be enjoying our 1st Christmas in our new house. It is an incredible dream-come-true. Our young children are especially excited and are assured that Santa has our new address.

Some of you may have been following my blogs about the trials and tribulations of a custom built home. They are a collection of real-life stories, honest and sincere and interesting to say the least.

We have some news. Although the wedding is some time in the future, Nancy and I are officially engaged. We are very happy. Life is good.

Whether or not you celebrate Christmas in all its formality, it has become a multi-denominational joyous time of the year. If you are lucky enough to live in Canada, it is a holiday. I hope you take this time off to have fun with your loved ones. Stay warm and safe and have a happy and healthy New Year in 2019. Please enjoy the recipe and jokes.

SLOW COOKER CHICKEN CURRY

INGREDIENTS

10- bone-in chicken thighs 2-3/4 lbs or 1.2 kg

1 Jar (650ml) thick and chunky salsa – mild or medium

1 onion chopped

2 Tbsp Curry Powder

½ cup Cream Cheese

DIRECTIONS

Place chicken in slow cooker.

Combine salsa, onion and curry powder and pour over chicken

Cook on Low 8-10 hours (or High for 5 hours)

Transfer chicken to platter. Cover and keep warm. Add cream cheese to slow cooker. Whisk until cream cheese is melted and sauce is well blended. Spoon over chicken and serve with rice or your favourite pasta.

Why don’t crabs celebrate Christmas? Because they’re shell-fish.
